Tiffany's Easy Eggdrop Soup

servings: 4-5

Ingredients

1 medium size saucepan
8-10 cups of water
1 1/2 tablespoon chicken base/boullion
1/2 cup chopped chicken *small portions*
1/2 medium finley chopped onion
1/4 cup grated carrots
3 beatened eggs

*can add fresh broccoli and other vegatables to soup.

Directions:
In Medium sausepan bring water, base, onion, carrots and chicken to a boil.  Let boil 10-15 minutes.  Take eggs and with wire wisk, stir eggs rapidly into broth. Stir quickly, avoid letting egg clump together.  Let simmer 5 minutes.  Can serve with egg noodles or with fried wontons. 

*Wontons..take egg roll wraps, cut in diagnals shapes.  Deep fry until golden brown, lay on paper towels till dry. 

 

Tiffany's Easy Eggrolls

servings: 3-4

Ingredients

1 bag of Dole Coleslaw Mix
1 Pack of egg roll wraps (found in any grocery store)
3 eggs
1 medium finley chopped onion
1 lb of chicken cubes; fairly small (can substitute with pork)
  for vegatarians, exclude the meat
1/2 cup cook rice *cooled*
1 large skillet of hot grease (vegatable oil) about 2in of oil

Directions:
Beat 2 eggs in medium size bowl, add meat, coleslaw, onion, and rice.  Mix.  In seperate Bowl beat egg.  According to directions on back of egg roll wrap package, take wrap, use tablespoon of mixture, roll and wet end with egg and roll over to secure.  In skillet, heat grease on medium high heat and lay egg rolls in hot grease and cook on one side for 5-7 minutes or until
golden brown, turn and repeat.  Once reached gold color, lay on plate lined with napkins.  Serve with hot Egg Drop soup, and ENJOY!

 

Santa Fe Soup

servings: 6

ingredients:

  • 1 lb ground meat
    • 1 can corn
    • 1 can pinto beans
    • 1 can diced tomatoes
    • 1 pkg taco seasoning
    • 1 pkg ranch dressing and season mix
    directions: brown ground meat, drain, add taco and ranch seasoning mix, stir add corn, beans and tomatoes (do not drain) stir cover and simmer for 30 mins.

    Rice/Mushroom Casserole

    Ingredients
    2 cups White Rice
    2 tsp. Olive Oil
    1 large Onion (chopped)
    2 cans Cream of Mushroom Soup
    1 cup Walnuts

    Directions
     

    1. Brown uncooked rice in sauce pan with oil.  This takes about 5 minutes.  Be careful because the pan gets hot.
    2. Add onions and continue heating till translucent.
    3. Combine all ingredients in a 9" X 12" casserole dish with 4 cups water.
    4. Bake at 350 F covered with aluminum foil for 50-60 minutes.  Remove cover and bake 10-15 more minutes.
    Jackie's Gourmet Chicken Rolls

    Ingredients
    4 boneless/skinless Chicken Breast
    4 slices boiled ham
    4 slices swiss cheese
    1 can Cream of Chicken Soup
    salt and pepper
    1/2 cup sliced almonds

    Directions
     

    1. Pound chicken breasts with mallet to thin and ease rolling. 
    2. Lay chicken breasts out and sprinkle with salt and pepper.
    3. Layer 1 slice of ham and 1 slice of cheese on each breast.
    4. Roll chicken breast up with ham & cheese on inside and secure with a toothpick.
    5. Brown rolls in pan.
    6. Place in casserole, cover with chicken soup, and sprinkle with sliced almonds.
    7. Bake at 350 F for 45 minutes covered with foil.
    Mrs. Shih's Peking Duck 
    Ingredients 
    1. 1 whole Duck 
    2. 1/2 cup light colored soy sauce 


    Directions
     

    1. Dry duck for 1 day. 
    2. Place duck in a roasting pan and heat in oven at 350 F for 1/2 hour.
    3. Reduce heat to 250 F and bake for 1 1/2 hours.
    4. Baste with soy sauce
    5. Turn duck over, and bake at 450 F for 45 minutes.

     

     

    Evie's Easy Rice/Pasta Dish

    Servings: 6

    Ingredients
     

    1. 1/4 CUP BUTTER
    2. 2 CUPS WHITE RICE
    3. 1/2 PKG EGG NOODLES
    4. 1 TSP CRUSHED GARLIC,
    5. SALT, PEPPER TO TASTE
    6. 3 CUPS BOILING WATER


    Directions

    1. BROWN EGG NOODLES WITH BUTTER UNTIL LIGHTLY BROWN.
    2. ADD GARLIC, SALT, PEPPER  STIR WELL.
    3. ADD UNCOOKED RICE, STIR WELL
    4. ADD BOILING WATER, BRING BACK TO BOIL
    5. COVER AND SIMMER FOR APPROX 25 MINUTES
